Hand sink supplied with liquid soap and paper towels.
Sushi prep line cooler was at or below 4 deg C.
Freezers were at or below -18 deg C.
Upright cooler was at or below 4 deg C.
Hot holding for miso soup was above 60 deg C.
Temperature log was available and up to date.
Dishwasher final rinse reached 73 deg C at plate surface (thermolabel).
-Ensure dishwasher is serviced on a regular basis to check that is working properly.
All food items in coolers and in dry storage area were protected from contamination.
Dry storage and kitchen areas were well organized.
No pests noted at time of visit. Pest control monitoring in place.
Washrooms were in sanitary condition.
General sanitation was good at time of inspection.
