Observation: Sandwich cooler not able to maintain a temperature of 4 C or below.
Bottom section of cooler ambient air temperature was 7 C at the start of inspection and then 9 C at the end of the inspection.
Top section of cooler with inserts was 10 C. Facility was busy during the time of inspection and food in inserts gets used quickly.
Corrective Action(s): Only store potentially hazardous foods in this cooler for a maximum of 2 hours until cooler is repaired and can maintain a temperature of 4 C or below at all times.
Note: Manager called in service technician to repair cooler. Technician scheduled to come today.

Routine Inspection
-Hand washing sinks equipped with hot and cold running water, liquid soap and paper towel. Reminder: paper towel must be located close to the hand washing sink.
-Coolers (except for sandwich cooler) registered at 4 C or below.
-Walk in freezer registered at -18 C.
-Hot holding > 60C.
-Cooked bacon registered at 45 C. This item is held at room temperature and discarded after 6 hours as per food safety plan.
-High temperature dishwasher registered at 76 C on plate surface during final rinse (after second run). Note: Dishwasher temperature should checked at the start of operation.
-Sanitizer solution registered at 200 ppm for quats and was available throughout the facility.
-Pest control in place.
-General sanitation satisfactory.
-Permit to Operate posted.
