Observation (CORRECTED DURING INSPECTION): Noted a stack of used oyster shells in a white container. The chef stated the shells were being re-used for a dish called motoyaki.
Corrective Action(s): The shells cannot be cleaned in the dishwasher. The shells were discarded during the inspection. The operator promised to use a food grade baking dish from now on.
