Observation: Pink and black mildew observed in ice machine.
Correction: Clean and sanitize ice machine properly.

Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation: 1. 0ppm chlorine detected on dishwasher.
2. While bleach sanitizer in bucket is observed for the front end, no bleach sanitizer is made for the kitchen.
Correction: 1. Repair dishwasher so that at least 50ppm chlorine is detected on dishware.
2. Bleach sanitizer must be made first thing in the morning, before any food preparation occurs.
Comments

The following items have been observed:
-->Potentially hazardous foods at room temperature are being time tracked - ensure foods are discarded after 2 hours.
-->Ice machine appears in sanitary condition.
-->Dishwasher final rinse reaches at least 50ppm chlorine on plate.
-->Bleach sanitizer in buckets are noted in kitchen and at least 100ppm chlorine is detected.
-->Handsinks are clear of items and accessible.
-->Foods are stored at least 6 inches above ground.
-->No foods are observed thawing at room temperature.

Note:
When potentially hazardous foods are stored in containers with ice, at room temperature, ensure ice is surrounding the containers and not only under containers.
