Observation (CORRECTED DURING INSPECTION): Can of mango puree was stored in an opened can in the bar cooler.
Corrective Action(s): Ensure opened canned foods are transferred into food grade containers to protect foods from potential contamination. Puree was transferred into a food grade container at the time of inspection.

304 - Premises not free of pests [s. 26(a)]
Observation: One dead cockroach was found on a sticky trap in the bar area and two dead cockroaches were found in two separate tin cats. No other evidence of cockroach infestation in the facility.
Corrective Action(s): Professional pest control services the facility every two weeks. Last service report on June 4 2020 indicated maxforce bait was added and both cockroach/rodent activity was under control. Continue to have pest control services service the facility and eliminate the cockroach issues.

Observation: Upright freezer compressor area was found to have grease debris and dead cockroaches.
Corrective Action(s): Ensure all equipment is maintained in a clean and sanitary condition to prevent potential pest attraction.

Observation: 1) Prep cooler (far side) was at 6C.
2) Prep cooler (far side) door seals were torn and debris was found accumulating in the door seals
Corrective Action(s): 1) Service or adjust cooler and ensure it is maintained at 4C or less at all times.

-Walk-in cooler was at 4C.
-Walk-in cooler (back) was at 2C
-Walk-in freezer (back) was at -12C.
-Prep cooler (closer to ice machine) was at 4C (bottom) and 2C (top).
-Bar cooler was at 4C.
-Chest freezers were at -18C.
-Chest freezer (banquet room) was at -17C.
-Chicken cooked to greater than 74C.
-Hot potentially hazardous foods cooled rapidly and were at 4C (sauces and chicken).
-Chemical dishwasher had a final rinse of 50ppm chlorine on the dish surface (minimum of 50ppm required for proper sanitizing).
-Handwash stations accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Equipment was found to be clean and sanitary.
-Ice machine was clean and well maintained.
-Raw meats were properly stored below ready-to-eat foods.
-Washroom clean and handwash station equipped with hot and cold running water, liquid hand soap, and single use paper towels.
