Baked potentially hazardous buns observed stored in warmer unit or at ambient temperature retail displays. Wiping rags in use stored in 100 ppm chlorine sanitizer solution. A new plywood barrier has been provided that can be positioned at kitchen door entrance to exclude entrance of pests during non-operation hours. Ensure barrier is positioned such that no gap between floor or walls is larger than 1 cm. Required premise cleaning has been conducted. Ensure floors throughout premise are thoroughly cleaned everyday, in particular hard to reach areas under / behind equipment using warm water and detergent, followed by sanitizer solution (100 ppm chlorine) Reuse of single use cake trays not observed. Ensure single use containers / items are discarded after use.
