Ice machine was clean.
All coolers were < 4 C.
All freezers were < -18 C.
No evidence of pests.
Bleach spray bottle was at 100 ppm.
Dishwasher final rinse cycle reached 80 C at the plate level.
Broth is cooled in an ice bath.
General sanitation was excellent.
