- Undercounter line coolers at or below 4'C
- Line freezers at or below -19'C
- Milk and cream dispensing coolers at or below 4'C
- All hot-holding units at or above 60'C
- Temperature logs are maintained
- General sanitation is good during inspection
- 3-compartment sink available with drain plugs
- QUATs sanitizer spray bottles (X3) measured at 200 ppm QUATs concentration with test strips
- Bleach sanitizer pails with wiping cloths measured at 200 ppm chlorine concentration with test strip
- Bleach sanitizer strips available on site
- Ice machine observed in good sanitary condition with scoop placed outside the machine
- Equipment stored in a sanitary manner
- All food observed stored covered and at least 6 inches off the floor
- Chemicals are stored away from food
- Staff verified that room temperature holding of potentially hazardous foods does not exceed 2 hours (timer available)
- Staff verified in-use utensils (e.g. coffee mixing spoons, tongs) are cleaned and sanitized every 2 hours (timer available)
