Observation (CORRECTED DURING INSPECTION): A very large pot of pork broth in the Walk-in cooler was not cooled health safely when reviewed with the operator. The broth was cooked yesterday then left out at room temperature for a few hours then placed in the cooler.
Corrective Action(s): Discarded the broth.

You MUST cool foods fast:

Once the broth reaches 60 deg C after cooking use your ice wand(s) and/or ice bath for
STEP 1: 60 deg C to 20 deg C within 2 hours
then,
STEP 2: 20 deg C to 4 deg C within 4 hours placed in the cooler

Observation (CORRECTED DURING INSPECTION): Single bowl servicing rice hot held in unit at 51-55 deg C (internal temperatures)

The rice was cooked over 2 hours ago as per operator
Corrective Action(s): Discarded 15 bowls of rice.

Maintain hot held foods at or above 60 deg C

Recommend demarkating on the temperature dial where the foods are maintained over 60 deg C

Observation (CORRECTED DURING INSPECTION): Bleach sanitizer for reused wiping towels not available.
Corrective Action(s): Store your rinsed wiping towels in the bleach sanitizer when not actively used: >100ppm as per the chlorine test strips

-Some food coverage lacking in the preparation cooler in the kitchen

Corrective Action(s): -Store raw eggs below other foods (same as raw meats/seafoods) in case of breakage
-Cover and protect foods
-Use scoopers handle-up out of the dry storage foods or keep outside in a washable container

Observation: -The stove and floor area underneath is food laiden and grease spots present
-Dry storage room food container exteriors are food laiden and floor area has food debris

-Clean and disinfect the bulk food containers and dry storage floor area
