Observation (CORRECTED DURING INSPECTION): Observed inserts stored in dry goods as scoops
Observed inserts double stacked onto food surface without a barrier inbetween
Corrective Action(s): 1. Ensure only a scoop with a handle, handle pointed up in dry bins. Otherwise, remove from bin after each use.
2. Inserts are not to be double stacked at the top of the prep cooler. In other coolers - ensure there is a lid/barrier inbetween containers of food.

Observation: Cleaning requires improvement at the following areas:
Corrective Action(s): - Walk-in cooler fan/condensor unit.
- Ice machine sheild
- Storage bins for utensils
- Cutting board storage area
- Floors require a thorough degreasing
- cold side line coolers - seals, interior and exterior
- Ceiling tiles and air intakes
- Mop sink - require a thorough bleaching
- Ensure stickers are removed from inserts prior to dishwashing
- Walls, counters, shelves, storage areas, etc. require a cleaning with a degreaser, rinse and then sanitized

- replace milk crates with smooth, easily cleanable container.

Discused FoodSafe Level 1 certificate expiry date - recommend management keeps record of foodsafe level 1 certificates on-site to ensure there is always one person on-site with a valid foodsafe level 1 certificate or its equivalent.
Discussed sanitizer for customer tables - ensure spray bottles are filled with an appropriate sanitizer (i.e. Quats at 200ppm)
Discussed ceiling - continue to work on replacing ceiling tiles and installing lighting fixtures
Discussed in-use utensil policy, observed knives and tongs on ice. Ensure all equipment including cutting boards are washed and sanitized every 4 hours in the dishpit.


Hand washing sinks equipped with liquid soap and paper towel

Quats sanitizer at 200ppm in labelled spray bottles
Dishwasher tested at 50ppm Cl - dishwasher should be tested on a daily basis to ensure a minimum 50ppm Cl residual. Also, recommend these tests are recorded on log sheets.
Beer lines cleaned routinely - recommend additional cleaning on exterior of lines
Staff appropriately dressed in uniforms
Bathroom maintained.
Discussed cleaning at slush machine at bar - ensure a sanitizer soak in Quats for 2 minutes after washing and rinsing.
