Observation: Open air island insert cooler showing 12-18 deg C. Operator is aware this unit is down and there is a work order to have it repaired the next few days. Operator observed time tracking the perishables on whiteboard. Every 2 hours any leftovers are discarded -good

Reused wiping towels for food contact surfaces maintained in sanitizer buckets when not actively used

Daily tracking sheets maintained for fridges, hot holders and mechanical washer

General Sanitation very good including hard-to-reach areas
In-Use Utensils: are replaced/washed every 2 hours as per operator -good
-all goods maintained off the floor >15cm to facilitate cleaning and monitoring pests underneath
-no signs of pests

Professional pest control comes on a regular basis: Terminix Pest Control comes in monthly -live, snap and UV light attractant traps observed onsite

Handsinks well stocked single service drying method, soap in a dispenser, hot/cold water and clear for access
