Observation: High temp dishwasher noted between 66-69 C at the plate during 10 cycles. 1 cycle reached 72.6 C at the plate with probe thermometer once. Final rinse cycle gauge indicates temperature reached at least 184 F.
Corrective Action(s): Ensure dishwasher can consistently reach 71 C or higher at the plate to properly sanitize dishes. Call dishwasher in for service and monitor temperature regularly until unit is fully serviced. Manual sanitizing step may be required if 71 C is not reached.

Observation (CORRECTED DURING INSPECTION): Side loading bay/ garbage access door left open and screen door propped open.
Screen door lower screen appears damaged
Corrective Action(s): Ensure all exterior doors remain closed at all times when door is not in use to prevent possible pest entry. Screen door can be used but must be in good condition and not allow pest entry.
Door shut during inspection.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: Required cleaning:
1. Under prep table across from walk in cooler - dried food debris (whole rotting onion, bun, Brussels sprouts)
2. Spilt AP Flour on the floor around bulk food bin downstairs
Corrective Action(s): Ensure the above areas are cleaned regularly and spills are cleaned up immediately after they are caused. Food debris can attract pests.

Observation: 1. Dishwasher curtains installed backwards Long then Short
2. Ice cream lid hinges held together with duct tape
3. Lower left drawer has duct tape holding drawer together
Corrective Action(s): 1. Ensure all equipment is installed and functions correctly. Clean and re-adjust curtains.
2./3.All surfaces must be smooth, durable and easy to clean - duct tape does not meet this requirement - repair/replace drawer, ice cream lid/cover.

Observation: 1. Cooler unit with drawers under flat grill is noted at 15 C - waiting on service. Staff just placed cheese in unit not aware of the out of order unit.
2. Right cooler door of prep cooler across from flat grill hanging on hinge.
Corrective Action(s): Ensure all equipment is functioning properly and if not is properly service. Ensure all staff are aware of units out of order - place a sign.
Repair damaged cooler door.

311 - Premises not maintained as per approved plans [s. 6(1)(b)]
Observation: 1.Steam / Kettle Station area has ceiling access with no cover over mixer unit. Dry-wall piece used as cover for ceiling access cover is broken in 2 pieces behind mixer unit.
2.Very dark in area around mixer unit - no light in area, poor lighting
3. Light bulb burned out above steamer unit
4. Light burned out downstairs in storage room by back of room
5. Tiles (2) broken in front deep frier - leaving large gap in hole to trap food debris and liquids.
Corrective Action(s): Ensure all surfaces are smooth, durable, easy to clean and non-absorbent.
1. Install proper access panel cover in ceiling above mixer. Remove broken dry-wall pieces from kitchen
2. Install additional light in mixer area to provide adequate light for working, cleaning and pest monitoring
3. / 4. Replace burned out lights in dry storage room downstairs and above steamer unit.
5. Replace broken tiles in front of deep frier unit.

Bleach sanitizer bottles through out kitchen noted at ~ 100 ppm chlorine detected.
High temperature dishwasher 72.4 C at the plate with probe thermometer once. 184 F noted at the gauge. Dishwasher temp consistently went between 66 - 69 C (*violation noted above)
