Observation: Hole in floor in walk in cooler has build up of debris.
Garbage cans are too high under counter, requiring handling them to place garbage in them when doing food prep.
Corrective Action(s): Cover hole in walk in cooler to prevent food from fallin into it until it can be repaired. Ensure that it is not a tripping hazard.
Garbage cans under counters should be lower to allow easy access without having to handle the garbage can.

Comments

All fridges are maintaining foods at 4 degrees Celsius or colder.
Freezers are -18 degrees Celsius or colder.
Handwashing of dishes was being carried out at time of inspection. Ensure that dishwasher reaches 120 Deg F as per instructions prior to use. Low temperature dishwasher contained 100 PPM chlorine residual at the plate surface during final rinse.
Third compartment of sink contained 200 PPM Quat residual at time of inspection for sanitizing dishes.
Rice was being hot held at 60 degrees Celsius or hotter.
All items are being stored off the floor.
