Staff observed hand washing and proper usage of single use gloves. - Sanitizer QUAT 200-400ppm available in spray bottles and sanitizer buckets with wiping cloths properly stored in the solution. - Hot holding unit measured at 60C. Metal containers are to be used for food to properly stay hot. - Under counter cooler with food inserts measured at or below 4C. - Cutting board noted clean and maintained. - Walk in cooler measured at or below 4C. Walk in freeser measured at or below -18C. - 3- comp sink maintained. Implements noted washed and air dried using racks. Sanitizer measured at 200-400 ppm QUAT at the sanitizer sink. - Garbage management noted good. No sign of pest activity observed at this date. fly control device noted and maintained. Back door equipped with weather seal and floor sweep rubber. - Lighting noted adequate.
