302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): At time of inspection, ware washer was in use, with no sanitizer residual detected. After manager had been notified of the deficiency, staff proceeded to put away wares that had not been sanitized. Ware washer had allegedly run out of chemical the night before, but communication failed.
Corrective Action(s): Rewash ALL wares that were run through the washing machine today. They can be done manually in your 3 compartment sink, or once the ware washer has been repaired.
Machine was refilled with sanitizer concentrate at time of inspection.
Use your store monitoring system. If something isn't working properly, document it! That's what it's there for.

Observation: 1) Numerous rags found throughout kitchen, not stored in a sanitizer bucket. Many in dirty condition close to food
2) Ice scoops at both ice bins found inside ice.
Corrective Action(s): 1) Store your wiping rags in provided rag buckets with sanitizer.
2) Always store your ice scoops in a clean container/holder that prevents the dirty handle from having contact with ice.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation (CORRECTED DURING INSPECTION): 1) Ware washer found without sanitizer residual.
No available refill sanitizer on site, even though logs indicated a manager checked "ware washer supplies" earlier today.
2) Milk dispenser at take-out window 7C-8C.
Corrective Action(s): 1) Always have spare chemicals on site for your critical equipment.
Diligently test your sanitizers & equipment.
Frequently check chemical levels. Note: a bright red light lights up when levels are low. Ensure staff know what this means and what to do about it.
2) Repair this machine. Use the alternate milk machine while repairs occur.

2) Mop sink in back room has been clogged for months - filled with stagnant, potentially sewage contaminated water.

Hand sink supplied with liquid soap, paper towels, hot/cold running water
Dishwasher repaired by picking up chemical from another location at the request of the EHO. See above note
All coolers other than above noted milk dispenser measured 4C or below
All freezers functional
Morning temperature checks occur on clamshell burger cookers, fried chicken, etc
Logs on site and available for review, however ware washed allegedly ran out of sanitizer last night, manager this morning logged "100ppm" sanitizer in the record books, and marked "yes" for ware washer supplies on site. The reason for monitoring logs is to catch deficiencies!
Time stamps on site and in use for burger prep line veggies & condiments.
Other than rags and leaks, sanitation satisfactory
Drain flies breeding in your water catchment bucket in basement. Address this by repairing your plumbing.
