Observation (CORRECTED DURING INSPECTION): Staff were observed filling the 2-compartment sink with Quats sanitizer and adding additional water to the sink at the same time
Corrective Action(s): This is a repeat violation. 2-compartment sink needs to be filled with sanitizer during all hours of operation to allow for proper sanitizing of equipment and utensils which cannot be washed and sanitized in the sink. Do not add additional water to the automatic sanitizer dispenser - automatic dispenser is designed to deliver 200ppm Quats sanitizer. Sink was prepared with 200ppm Quats sanitizer at the time of inspection.

Comments

-Follow-up inspection to January 11, 2023.
-Soup stock made the previous day was at 4C. Staff were observed attempted to cool a large pot of soup in the walk-in cooler with the pot covered. Soup was greater than 60C. Staff then attempted to cool the soup with the ice mixing wand. Potentially hazardous foods must be cooled form 60C to 20C in 2 hours or less and from 20C to 4C in 4 hours or less. Foods can be cooled in shallow container and with the lid off the allow steam to escape. Also, do not use the mixing wand until the soup is sufficiently cooled, otherwise the ice will melt and the soup will not cool rapidly.
-Quats sanitizer spray bottles were functioning and tested at 200ppm.
-Did not observe foods thawing at room temperature at the time of inspection.
-Deli area has started offering cooked hot chicken and soondae. Operator has instituted a time tracking sheet - foods are discarded or sold within 2 hours. Time tracking sheet needs to be updated to allow staff to enter the time when the food was placed in the hot holding unit rather than a fixed time of 0900, 1100, 1300, 1500, and 1700.
