Observation: 1. Large prep cooler has an ambient temperature of 6.8C. No food stored inside this cooler. Operator phoned technician, who said they will come to facility today to repair large prep cooler.
2. QUATS sanitizer dispenser is 100 ppm
Corrective Action(s): 1. Ensure the prep cooler is repaired and has an ambient temperautre of 4C at all times. Small inserts of food (2 hour turnover!!) may be stored inside this prep cooler during the lunch and dinner rush.
2. Repair the sanitizer dispenser immediately.

Follow-up inspection conducted for report: JTUG-CHZUWT
- Wheels on the deep fryer continue to have a large amount of grime. No cleaning was observed to be done on the wheels. Operator said that the wheels need to be pressure washed, and has phoned the professional cleaning company to clean the cook station. District inspector demonstrated to operator that the grime on the wheels can easily be removed with a paper towel.
- Sanitizer at QUATS dispenser is 100 ppm. Operator said that they the technician will be in this weekend to repair to dispenser to ensure 200 ppm of QUATS is dispensed.

Corrective action:
- Have staff remove the grime off the wheels tonight!! Floors, especially along the cook line must be cleaned and disinfected regularly to avoid attracting pests.
- Ensure the concentration of QUATS from the dispenser is 200 ppm at all times. Use test strips to verify the concentration of sanitizer. In the meantime, prepare diluted bleach solution (1 tsp bleach to 1L water) for all the spray bottles.

Another follow-up inspection will be conducted tomorrow or early next week to ensure that the large prep cooler is functioning at 4C or below, QUATS sanitizer is dispensing 200 ppm, floors underneath the cookline are cleaned and disinfected, and grime is removed from the deep fryer wheels.

Failure to comply with the above will may lead to further enforcement action (e.g. correction orders, tickets).
