Observation (CORRECTED DURING INSPECTION): Lower shelves of prep area in kitchen observed to have accumulation of rodent droppings.
Equipment intended for food preparation stored in this area.
CORRECTED DURING INSPECTION - Items removed and put through sanitizing dishwashing cycle.
Lower shelves of bar area have accumulation of rodent droppings.

Corrective Action(s): Continue to clean and sanitize these affected areas - all lower shelves in preparation area need to have items removed from storage, area cleaned and sanitized and all equipment run through sanitizing cycle on dishwasher.
Remove all dishes and equipment from lower shelves until rodent infestation is eliminated.
Spray rodent droppings with 200ppm chlorine solution or equivalent. Remove droppings from area. Wet affected area with 200ppm chlorine or equivalent and soak area.

Observation: Back door has large gap that can permit entry of rodents into facility.

Corrective Action(s): Have back door repaired so that any holes are sealed.
Have pest control technician install smaller rodent traps to outside. Currently only large bait boxes are placed outside. Replace missing traps.

Corrective Action(s): Ensure thorough cleaning occurs in areas where rodent droppings have been found. Use 200ppm Chlorine or equivalent to sanitize all surfaces.

*** Discuss with Pest Technician methods going forward to deal with pest infestation. Pest infestation does not seem to be improving. All traps were empty at time of inspection.
