Observation (CORRECTED DURING INSPECTION): Sausage patties (about 20 pieces) noted in the hot hold unit at 48.6C during the inspection. Time label on the hot hold container had expired.
**Issue corrected during the inspection** Supervisor discarded all the sausage patties during the inspection.
Corrective Action(s): Please ensure all food items in the hot hold units are able to maintain at a temperature of 60C or higher to prevent bacterial growth.

Observation (CORRECTED DURING INSPECTION): 2 sanitizer buckets in the baking area noted with 0 PPM of QUAT.
**Issue corrected during the inspection** Manager discarded and refilled the sanitizer containers with 200 PPM Quat.
Corrective Action(s): Ensure to change out the sanitizer buckets as often as required in the sanitation plan. The sanitizer solution may need to be changed out more often if usage increases and a high amount of organic buildup is noted in the solution impeding the sanitizer's effectiveness.

Observation: Some fruit flies noted in the baking area and mop sink area.

Corrective Action(s): Continue to work with your pest control company (Abell) to address the current pest issue. Ensure your pest control company brings back your fly trap (the current one was noted inadequate and was removed during the last pest inspection on March 15, 2022 to exchange for a larger size). Maintain the facility in a sanitary condition by removing the food source from the pests.

Observation: Food soil noted in the cabinet and below the bread holding rack in the baking area. Foods and doughnuts noted on the floor in the walk-in freezer.

Corrective Action(s): Clean and sanitize the above noted areas of food soil and maintain in a sanitary condition to avoid attracting pests in the facility.

Observation (CORRECTED DURING INSPECTION): Sandwich prep cooler was noted at 11.0C during the inspection.
**Issue corrected during the inspection** Manager noted that the door was not closed properly when food was loaded into the unit, causing a gap in the door that might have allowed hot air to enter. Last time the temperature of the cooler was checked less than 2 hours ago and the temperature was less than 4C. Door of the unit was fixed and temperature was at 3.8C when verified again.
Corrective Action(s): Ensure all refrigeration units are able to maintain ≤ 4C at all time. All doors must be properly closed to maintain proper circulation of cold air in the units. Continue to monitor for temperature often so ensure all refrigeration units are functioning properly.

High temperature dish machine was noted at 73C during the rinse cycle, at the plate level.
QUAT sanitizer was noted at 200 PPM at the dispenser.
All chemical spray bottles/ containers have proper name label.
