General:
- handwashing stations stocked with soap, paper towels and hot and cold running water
- sanitizer measured >200ppm chlorine; use a solution of 5mL unscented household bleach in 2.5L of water for a 100ppm solution
- dishwasher reached 75C at the final rinse cycle
- no expired foods upon random audit
- general sanitation is satisfactory
- operator has obtained FOODSAFE Level 1 book and is to take test in the near future (reminder that refresher must be taken before January 16, 2019 or the full class must be taken)
