Corrective Action(s): All cold potentially hazardous foods relocated to the under the counter cooler and walk in freezer (interim). Ensure all cold potentially hazardous foods are stored at or below 4 degrees C.

Observation: Ambient air temperature of walk in cooler ranges from 5 degrees C in the coldest section to approxmiately 7 degrees C. Various cold potentially hazardous foods in the walk in cooler internal food product temperatures ~6 degrees C. Operator's accurate indicating thermometer reading ~ 50 degrees F and gauge for walk in coole reading 8 degrees C.
Corrective Action(s): Service the walk in cooler and ensure it is capable of maintaining 4 degrees C or less. Do not store any cold potentially hazardous foods until reinspection. Correct immediately.
