Observation: - Minor amount of mouse droppings noted on lowest shelf at the end of the front service area and in edges/corners in production area.
Corrective Action(s): - Thoroughly clean above noted area to remove all droppings and sanitize areas with a bleach solution.
- Monitor areas for any additional rodent activity. If additional droppings are noted, clean and sanitize affected area promptly and notify pest control technician for additional control measures (ie. traps or pest proofing) to be applied to these areas.

Comments

- Premises and equipment maintained in sanitary condition (with the exception of the minor amount of mouse droppings noted in the above violation)
- Hot and cold running water supplied to sinks
- Handsink was supplied with liquid soap and paper towel
- Coolers were operating at 4C or colder
- Freezers were maintaining products frozen
- High temperature dishwasher operational and met required sanitizing temperature. Temperature measured at dish surface: 78C
- Chlorine bleach present for sanitizing food contact surfaces and equipment. In use wiping cloths kept Chlorine test strips present for checking concentration.
- Reviewed cleaning and sanitizing procedures for ice cream machine with Operator. Removable components are washed in dishwasher. Remainder of machine is clean in place - wash, rinse, sanitize with 200ppm chlorine bleach solution.
- Reviewed procedures for in use utensils (scoops). Kept in ice water. Replenished 2-3 times per hour. Ensure scoops are washed and sanitized at least every 4 hours.
- Milkshake tins are washed and sanitized after each use.
- Ice cream mix is supplied from Birchwood Dairy (as well some finished flavours). Flavourings (inclusions) added into pre-made mix supplied from Birchwood Dairy.
- Pest control contract in place with monthly service.
- Staff/public washroom was maintained and supplied with liquid soap and paper towel.
- Foodsafe requirement met at time of inspection
- Permit to operate with valid decal posted
Note: Food service establishment has additional storage room at adjacent premises for additional frozen storage (chest freezers) and dry storage. Checked at time of the inspection.
