Observation (CORRECTED DURING INSPECTION): Ice level for inserts at salad station was not high enough, and inserts were not in contact with the ice/ice water. Salad ingredients were measured to be at 12C-14C.
Corrective Action(s): Level of ice water in bin was raised at time of inspection. Ensure salad bar inserts are used within 2 hours.

Observation (CORRECTED DURING INSPECTION): - Knife rack and knives had build-up of food debris on them
- One vegetable slicer that was not in use also had build-up of old food debris
Corrective Action(s): - Knives must be cleaned and sanitized prior to placing in knife rack, and knife rack must be regulary cleaned and sanitized as well
- Ensure all vegetable slicers are disassembled, washed, and sanitized after each use. There should be no old food residue left on any part of these slicers after proper washing and sanitizing.

- High-temperature dishwasher reached 71.9C at dish surface during rinse cycle - good
- Glass washer at bar dispensed 50 ppm chlorine to glass surface, detected after rinse cycle - good
- Sanitizer solution in buckets were tested to have 200 ppm Quat residual
- Proper cooling, reheating, and thawing practices observed - good
- All coolers were maintaining temperatures at 4C or colder
