Observation (CORRECTED DURING INSPECTION): Raw and precooked meats stored in the drawer cooler under the stove were measured with an internal temperature of 16C. Chef stated meats were transfer into the drawer cooler 3 hours ago.
Corrective Action(s): Move all meats back into the walk-in cooler. Do not store any potentially hazardous food in the drawer cooler until serviced and temperature can be maintained at 4C or less.

Observation (CORRECTED DURING INSPECTION): Mesh potatoes and corn soup stored in the hot holding unit measured with an internal temperature of 54C. Chef stated they were cooked half an hour ago.
Corrective Action(s): Reheat the aforementioned food to an internal temperature of 74C or above and transfer back to the hot holding unit. Increase the temperature of the hot holding unit.

Observation: 1. Glass washer at the bar area dispensed 0 ppm iodine at plate level. Stock bottle observed to be not empty.
2. Dishwasher at the bar area dispensed 0 ppm chlorine sanitizer at plate level. Stock bottle observed almost empty and rubber line appeared to by empty.
Corrective Action(s): Wash and sanitize all glasses in the kitchen dishwasher for now. Any glasses washed by the above equipment must be re-sanitized again. Correct by: immediately.

Observation (CORRECTED DURING INSPECTION): Single use paper towels were not available at the bar and serving area hand washing station.
Corrective Action(s): Ensure paper towels is readily available at all hand washing stations to facilitate hand washing.

Observation (CORRECTED DURING INSPECTION): Two cans of drinks were stored in the ice machine for cooling. Cans were immersed in ice.
Corrective Action(s): Do not store any other items in the ice machine. Ice should be kept clean for safe consumption. Remove the cans immediately.

Observation (CORRECTED DURING INSPECTION): Raw chicken meats were thawing under ambient room temperature. Temperature measured at 7C.
Corrective Action(s): Thawing must be done under cold running water or inside a functional cooler. Do not thaw potentially hazardous food under ambient room temperature.

Observation: Small gap observed under the back entrance door.
Corrective Action(s): Seal the gap to prevent any entry of pests. Correct by: Oct 26, 2023.

Observation: 1. Drawer cooler under the stove measured with an ambient air temperature of 16C.
2. Glass washer unable to dispense any levels of iodine sanitizer at plate level.
3. Dishwasher at the bar unable to dispense any level of chlorine sanitizer at plate level.
Corrective Action(s): Service / fix the aforementioned equipment to ensure following:
- Drawer cooler maintained at 4C or less.
- Glass washer dispensing 12.5 - 25.0 ppm iodine sanitizer.
- Dishwasher in the bar dispensing 50-200 ppm chlorine sanitizer.
These equipment must not be used until serviced and verified. Correct by: Oct 13, 2023.

Observation: In operator's absence, no staff on duty was able to provide evidence of having FOODSAFE Level 1 or equivalent.

Routine inspection:
- Walk-in, stand-up, draw cooler under the grill measured at 4C or less.
- Stand-up and chest freezers were functional.
- Other hand washing stations provided with hot/cold running water, liquid soap and single use paper towels.
- 200 ppm quaternary ammonium sanitizer available in spray bottles and from the dispenser.
- Low temperature dishwasher in the kitchen dispensed 100 ppm chlorine sanitizer at the plate level.
- Food products stored off the ground and organized.
- Knives and utensils maintained in sanitary conditions.
- General sanitation satisfactory.
- No pest activities observed at the time of inspection.
