Observation (CORRECTED DURING INSPECTION): Quats solution in one sanitizer bucket storing wiping cloths near grill area measured 100 ppm with a test strip.
Corrective Action(s): -Ensure 200 ppm quats solution is used to effectively sanitize food contact surfaces. Prolonged use of the solution and storing dirty cloths in the solution weaken the sanitizing capability of quats which could result in incomplete destruction of bacteria. Replace the bucket with fresh quats solution every 2-4 hours or when the solution becomes visibly dirty.
-Staff replaced quats solution at the time of inspection.

Observation: Grease build-up observed on floors underneath deep fryers. Food scraps observed on floors underneath the prep table unit in kitchen area and on floors underneath drink syrup shelves. Date to be corrected by: Today
Corrective Action(s): -Thoroughly clean above noted areas to prevent attraction of pests. Implement a regular cleaning schedule to clean these areas.

All handsinks supplied with hot & cold running water paper towels and liquid soap.
All quats sanitizer measured at 200 ppm at the dispenser and in spray bottles & buckets except in one bucket near the grill. High temperature dishwasher reached 74C at plate level during final rinse cycle.
2-compartment sink also available with quats dispenser installed above.

Walk-in cooler measured at -1C.
Walk-in freezer measured at -18C.
Upright cooler measured at 3.8C.
Upright freezer measured at -19C
Small freezer storing frozen raw beef patties measured at -22C
Front area drink cooler measured at 1.3C.
Final internal cooking temperature of deep fried chicken patties probed at 89C.
Final internal cooking temperature of cooked beef patties probed at 82C
All hot held items (beef & chicken patties, eggs, onions and gravy) measured at 60C or above.
All containers with cut vegetables in room temperature are time tracked and the food items are discarded every 2 hours.
Temperature monitoring logs maintained
Dry storage shelves are neatly organized; all items were 6 inch of the floor.
Good storage practices overall;food items are covered,labelled and dated;all chemical containers are labelled.
Staff wash hands frequently & wear hairnets or hats.
No signs of pests identified at the time of inspection.
Vent hoods are maintained;next service due dated on July 30, 2018.
All light fixtures are covered in kitchen area.
Permit posted in a conspicuous location. Managers (2) have Foodsafe 1 certificate.
