***Dishwasher still not dispensing sanitizer - Manual sanitizing practices in use. 100 ppm chlorine detected in 2 comp dish pit sink. Dishwashing with mechanical dishwasher and sanitizing in sanitizer solution for 2 minutes then air drying. Technician expected to arrived later today. Monday premise is closed, Tuesday next follow-up. Continue dishwashing practices to maintain sanitation until repairs are complete. Correction order still in place.
***Soup base hot held at 67 C and 62 C - satisfactory. Do not turn off heat, continue to maintain >= 60 C
***Front handsink noted with hot & cold water, liquid soap and paper towel
