Observation (CORRECTED DURING INSPECTION): Curry sauce in a medium sized bucket cooling at room temperature -worker indicates it has been there for about 30 minutes -temperature of sauce at 40 deg C
Corrective Action(s): Perishables must be cooled FAST -use ice wands &/or ice baths for liquid foods

60 deg C to 20 deg C within 2 hours (methods depending on type of food consist of wide-shallow pans, cut into smaller portions, ice baths, ice wands)
Step 2:
20 deg C to 4 deg C within 4 hours -transfer foods into the fridge

Observation: Chemical cleaners such as bleach, Comet and QUAT sanitizers are being stored above the 2-compartment sinks on the clean side of the dishpit area
Corrective Action(s): Cleaning chemical must be stored down and away foods and food related goods -find an alternate location such as a cabinet at floor level near the washrooms
