Observation: Sanitizer reservoirs prepared too strong, approx 1000 ppm chlorine.
Correction: All wiping cloth rags in use are to be stored in a container of sanitizer solution (100 ppm chlorine, 1 tea spoon of bleach per 1 litre of water).

Food ingredients and sushi rolls prepared in advance stored in lower compartment of prep cooler.

Cooked chicken breasts stored in food warmer above 60 C

Take out containers stored upside down when removed from packaging.

Additional shelf provided in dry storage room to maintain inventory off the floor.
