Observation: Build up of debris along perimeter of walk in freezer. There was a build up of debris and ice behind and underneath the shelving.
Ensure all areas of the walk in freezer cleaned regularly to maintain sanitary condition.
Operator stated one of the shelves in the walk in cooler are being replaced which will facilitate with organization and allow for easy cleaning.

Hand sinks equipped with soap and paper towel
All cooling units were 4 C / 40 f or colder
All freezer units were -18 C / 0 F or colder
All hot holding units were 60 C / 140 F or hotter
Sanitizer (quaternary ammonium) was found to be 200 ppm in buckets to store wiping cloths and in 3 compartment sink to sanitize dishes
Food items were covered, dated and at least 6 inches off the floor in storage areas
Pest control in place, no sign of pest activity during the time of the inspection.
All refrigeration units and hot holding units equipped with accurate thermometers
Employees were in proper attire and had adequate hair control (hair nets)
Employees washed hand s at an adequate frequency in between tasks and prior to handling food.
Permit was posted in a prominent location
Foodsafe certificates were available onsite and verified to be within date
Note: Foodsafe recertification information was provided to operator as some of the employees certificates expire in July 2018.
Monitoring records (temperature and sanitation) were available and up to date.
Overall maintained in a sanitary condition
Note: walk in freezer requires cleaning behind and underneath shelving.
