- Empty out garbage at the end of each day and sanitize all work areas
- Monitor the area for any pest activity on regular basis

- All coolers- walk-in cooler, upright storage cooler(outside) two prep cooler, walk-in bear cooler and bar coolers are measured at less than 4C
- All freezers are functional
- Hot holding units are greater than 60C
- Dishwasher is measured dispensing 50ppm chlorine residual during final rinse cycle
- Sanitizer solution in spray bottles and buckets is measured at 200ppm quats solution
- Food storage practices are satisfactory
