Observation (CORRECTED DURING INSPECTION): Bleach sanitizer pails were less than 50ppm.
Corrective Action(s): Bleach must be maintained between 100ppm to 200ppm to properly sanitize food contact surfaces. Bleach was prepared at 100ppm at the time of inspection.

Observation: Rodent droppings were found throughout the facility.
Corrective Action(s): Facility must be serviced by a professional pest control operator in order to mitigate pest infestation. Facility has been issued a Public Health Act Closure Order regarding pest infestation. Operator has contacted existing pest control operator and has contacted another pest control operator, who will be on-site tomorrow.

Comments

-Walk-in cooler was a 4C (both kitchen and back storage area).
-Walk-in freezer was at -13C.
-Prep coolers were at 4C (top and bottom).
-Bar cooler was at 2C.
-Upright freezer was at -18C.
-Chest freezers were less than -18C
-Hot potentially hazardous sauces are now cooled in the walk-in freezer, followed by transferring to the walk-in cooler. Sauces were probed at 4C to 5C.
-Chemical dishwasher had a final rinse concentration of 50ppm to 100ppm bleach on the dish surface (mininum 50ppm required for proper sanitizing).
-Handwash stations easily accessible and suppled with hot and cold running water, liquid hand soap, and single use paper towels.
-Washrooms clean and well maintained.
-Facility has been issued a Public Health Act Closure Order regarding pest infestation. Facility is to remain closed until conditions of the Order have been met.
-Operator has valid FoodSafe Level 1.
