Food Handler Hygiene
o Hand wash station is fully supplied with liquid soap and paper towels in dispensers. Washrooms for public and staff are also fully supplied for hand hygiene.
o Operators had clean clothing for food preparation

Storage Temperatures
o Cold holding Coolers are below 4C; Cold holding Freezers are below -18C
o Hot holding gravy are at 60C.
Hot dogs are hot holding at 40C but intended to be served immediately and used up within 30min.
Hamburgers are being held in warmer at 30C for 30min before cooking on grill until 74C. This method is not best practice, but acceptable at this time as it is being reheated.
Ensure you are using a probe thermometer to check internal temperature of burgers have reached 71C during cooking, 74C during reheating.
Burgers, internal temperature taken: 73C.

Food Processing and Food Protection
o Approved Food Source - Operator keeps receipts of food ingredients from an approved source
o Food Storage - Food is stored in covered containers.

Maintenance and Sanitation
o Sanitizer bottles - have 200ppm Quats (300ppm measured)
o Storage of chemicals is separate and away from food
o Quat sanitizer available for dishwashing in 3 compartment sink.
o Condition of equipment and surfaces - food contact surfaces and equipment are in good repair and clean condition
o Pest control - there are no signs of pests at the time of inspection.

Administration
o Valid operating permit is posted in public view
o Staff is certified in food safety
