Observation (CORRECTED DURING INSPECTION): Cooked meat dishes were sitting at 20C on a shelf outside the walk in cooler. Operator said that they had been there for 45 minutes and were going to be re-heated for customer orders. Potentially hazardous foods, must stored </=4C or >/=60C to prevent the growth of pathogens.

Correction: Operator was told to place the meat dishes into the walk-in cooler where the temperature was <4C.

Observation (CORRECTED DURING INSPECTION): Chlorine sanitizer in buckets was at 10ppm. A minimum of 100ppm (max 200ppm) chlorine is required for sanitizing food contact surfaces.

Correction: Operator discarded the weak chlorine solution and prepared new solution. Concentration was 200ppm. Sanitizer solutions must be replaced every </= 3 hours to maintain the required concentration of chlorine.

Observation: 1) Dumpsters outside restaurant had debris on the ground and flies present. Garbage and debris attracts pests such as rodents and flies.
Date to be corrected by: June 15/18
Correction: Clean the debris around the dumpsters and pressure wash the dumpsters more regularly to reduce the fly population.
2) Dust was accumulating on kitchen ceiling tiles next to ovens/stoves. Dust can fall into food and contaminate it.
