Observation: Low temperature dishwasher is unable to maintain proper chlorine concentrations (e.g. 50 ppm at 38 degrees C or more) for sanitizing.
Corrective Action(s): Have dishwasher serviced so that it can maintain proper chlorine concentrations for effective sanitizing. Continue to use manual warewashing method for final sanitizing step. Date to be corrected by: Immediately.

Follow up to Rpt # MBEK-ASGTET

Owner has obtained new sanitizer for low temperature dishwasher and dishwasher was primed at time of inspection, however, approximately 10 ppm chlorine was detected at utensil surface. This is a chronic issue. Future non-compliance may result in further enforcement action.
Hand washing stations supplied with hot and cold running water, liquid hand soap, and single use paper towels.
Wiping cloths stored in bleach water sanitizer at 200 ppm chlorine.
Sticky fly tape has been removed from food preparation/storage areas. Rice scoop is being stored in an ice water bath and mesh bag of onions is not being stored on the ground. Reminder to cover all food items to protect from contamination.

Correction order issued. Follow up inspection required.
