*Bacon was probed at 55°C and held at room temperature, cooked 15 minutes ago.
→Hot foods must be hot held at above 60°C or be discarded after two hours.
→Operator changed the time tracking sticker to reflect the two hour limit.

-No signs of pests, pest control is in place

-Along the edges and corner of the dry storage room has food debris. Please clean to prevent attraction of pests.
-In use utensils not stored properly because all the ice in the ice bath has melted. To prevent the growth of harmful microbes please ensure the ice bath is icy at all times.
