Observation: Build up of food debris, grease and flour noted in the following areas:
1. On storage shelves in the walk-in cooler.
2. Floor behind and around the dough mixer
3. Floor underneath the double sink and deep freezer
4. Underneath the pizza boxes storage shelf
5. Cabinets underneath the pizza pan holding counter
6. Hand sinks
7. The dough mixer
7. Floor in general in all corners
Corrective Action(s): Thoroughly clean the above surfaces to remove any build up ( By October 30, 2018)
Recommneded replacing the existing walk-in cooler shelves with movable stainless steel shelving unit.

Observation: Ice build up noticed on the refrigerant supply line to the pizza preparation cooler.
Corrective Action(s): Repair or service the cooler to ensure it is working properly and to prevent ice build up. Replace door seals for the cooler if necessary. ( By October 31, 2018).
