Observation: - Several small flies noted in seating area near garbage bin and in drive thru/coffee area.
Corrective Action(s): - Contact Pest Control Company to provide service for flies. Maintain a high level of sanitation cleaning up any spills immeidately and ensuring garbage is remove frequently.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: - Food debris and miscellaneous food packaging items noted on the floor in the following areas:
- under compressor unit adjacent to walk-in freezer
- floor of the walk-in freezer under boxes
- under/behind espresso machine cooler
- Water was noted pooling on floor adjacent to mop sink. Pooling water can lead to pest issues.
Corrective Action(s): - Thoroughly clean the above noted areas to remove all food and debris. Implement regular detailed cleaning schedule to address this issue. [Correction date: 13-Jul-2019]
- Floor adjacent to mop sink was mopped once the issue was brought to the Manager's attention. If this is a repeated issue, a splash guard may need to be installed on right side of mop sink to prevent water being drained into mop sink from spilling/splashing on floor.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: - Gasket on walk-in cooler door is in poor condition and is no longer fully affixed.
- External temperature gauge on walk-in cooler door was not functioning.
Corrective Action(s): - Repair/replace gasket on walk-in cooler door to ensure door closes securely.
- Repair/replace gauge on walk-in cooler. [Correction date: 25-Jul-2019]

Comments

- General sanitation of premises and equipment were satisfactory with the exception of the hard to reach areas of the floor and area adjacent to the mop sink (noted in violation above)
- Handsinks in food preparation area and dishwashing area equipped with liquid soap and paper towel.
- Handsinks in staff washrooms/changerooms equipped with hot and cold water, liquid soap and air dryers.
- Coolers were operating at acceptable temperatures:
- Walk-in cooler 4C *Initially temperature was 6-7C; however it decreased during inspection. Ensure temperature is monitored and service technician is contacted if 4C or colder is not maintained
- Drawer cooler 3C
- Under prep line salad cooler 0-1C
- Undercounter drawer cooler 3C
- Undercounter espresso machine cooler 3C
- Undercounter drive thru cooler 3C
- Undercounter smoothie cooler 4C
- 2 door reach in cooler 2C
- Soft serve machine product reservoir 4C
- Freezers were maintaining product in a frozen state:
- Walk-in freezer -16C
- Right grill side freezer -14C
- Left grill side freezer -16C
- Hot holding of potentially hazardous food was at acceptable temperatures
- Cooked chicken patty 72C
- Cooked beef patty 64C
- Dishwasher was operational. 100ppm chlorine detected after final rinse. *Test strips were present to check sanitizer concentration; however colour match indicator (on packaging) not present. This is needed to correctly read the test strip and determine the level of chlorine. Locate package or obtain new package of test strips which has the colour match indicator. Additionally, record are not kept for checking sanitizer level for dishwasher. Records should be kept to verify testing is occurring.
- Chlorine residual in sanitizer solution in buckets with wiping cloths measured 200ppm chlorine.
- Quats sanitizer for manual warewashing sanitizing step and for sanitizing food contact surfaces present. Concentration in spray bottle checked and from dispenser at 3 compartment sink measured 200ppm.
- No signs of rodent activity noted at the time of the inspection
* Hole noted in lower portion of wall behind egg cooker. General Manager reported this would be fixed/addressed.
