Note: The restaurant has been closed for two months. The operator called on May 27, 2019 and requested the opening inspection.
The kitchen is remain the same (no renovation or alteration). Roof refinished only.


Kitchen:
General sanitation - good (a deep cleaning has been done in the premise).
Fan hood - clean;
Handwashing stations - satisfactory;however, refill a paper towel dispenser near the dishwasher (it's not coming out). Ensure that the bar hand sink stoked with liquid soap and paper towel.
Chest freezers at -18C;
Small domestic cooler with small amount of bevereges at -0.5 C;
Bleach sanitizer - available;
Prior to opening premix a fresh surface sanitizer which must be available in the kitchen and bar.
Note: Walk-in freezer is not in use/A dray storage area/
Dry storage - organized; containers with lids for dry food - available;
Pest Service on site ("Kwality"). Traps are set and empty at the time of inspection.
Dishwasher - satisfactory.

Buffet station:
Turned off at the time of inspection.
Ensure that the hot holding table keep food at 60 C or above. /An insert thermometer has to be used./

Front/Bar:
Hot water - available;
Ice-bin - satisfactory;
An ice- scoop is stored safely at the time of inspection.
Alcohol cooler is turned off (not in use);
Front beverage cooler at 4.0 C;

Note: Small amount of food on site.

Recommendation:
- Ensure that all food is covered.
- Ensure that food from open tin containers are transferred in food grade containers with lids.
- Check the dishwasher every day with test strips to ensure proper dish/utensil sanitation procedures (must be at list 50 ppm of Chlorine solution).

Note: Restoration in the basement starts as a week (still ongoing/the same condition).
