Observation: Build up of flour noticed on the pizza dough sheeter machine and behind the machine.
Corrective Action(s): Clean the pizza dough sheeter thoroghly after moving the machine. Ensure to remove flour from all parts of the machine. Sanitize all food contact surfaces using 100 ppm chlorine bleach solution ( Jan. 8, 2019)

Comments

* Ensure that the dough mixer bowl is washed and sanitized in the sink every 4-6 hours. Do not leave it without cleaning overnight.
* Clean all dry storage shelves and floor in all corners and behind equipment to remove flour build up. ( Jan 8, 2019).
* Provide paper towels at the hand sink.

Pizza preparation cooler below 4 C.
Beverage cooler at 4 C or below.
Deep freezer at -20 C
Chlorine bleach sanitizer in the wiping cloth bucket tested 200 ppm.
