Observation (CORRECTED DURING INSPECTION): Potentially hazardous (perishable) food stored in the two-drawer cooler at the cook line measured 7 to 9 degrees C (internal food temperature). Ambient temperature: 9 to 10 degrees C. Note: Operator stated cooler was recently stocked, potentially causing a temperature increase.
Corrective Action(s): As temperature had not decreased to 4 degrees C or less during the inspection, the majority of food was transferred to another cooler at 4 degrees C or less. Remaining portion of food is to be used within two hours. Noted cooler is not to be used for potentially hazardous food storage, with the exception of small quantities that are to be used within a two hour period.
Note: EHO to follow-up to confirm unit is capable of maintaining food at 4 degrees C or less.

Observation (CORRECTED DURING INSPECTION): No paper towels available for both bar hand sinks.
Corrective Action(s): Paper towels supplied. Ensure all hand washing stations are accessible and properly supplied with hot and cold running water, liquid soap, and paper towels at all times in order to facilitate proper hand washing.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: Accumulation of grease and debris at cook line. In addition, bar cooler (downstairs) has an accumulation of debris and some mildew growth on surfaces.
Corrective Action(s): Ensure above-noted areas are thoroughly cleaned in order to (1) limit attraction of pests, and (2) limit potential contamination of food and food contact surfaces. Date to be corrected by: December 12, 2022.

315 - Refrigeration units and hot holding equipment lack accurate thermometers [s. 19(2)]
Observation: 1. Built-in temperature gauge on the two-drawer cooler at the cook line is displaying less than 4 degrees C, however, temperature of unit is approx 7 to 9 degrees C.
2. Accurate thermometers not observed in some other coolers (for example, pizza prep cooler).
Corrective Action(s): Ensure every cold holding unit is equipped with a thermometer accurate to +/- 1 degree C in order to verify unit temperatures. Date to be corrected by: December 6, 2022.

- Low temperature kitchen dishwasher measured 50 to 100 ppm chlorine in the rinse residual at the utensil surface (required: minimum 50 ppm chlorine).
- Bar glasswasher measured 25 ppm iodine in the rinse residual (required: 12.5 to 25 ppm iodine).
- No visible signs of pest activity observed at time of inspection.
