Observation: Rodent droppings noted on top of the compacter in the garbage dumping area. Food spills and debris noticed around teh compacter.
Corrective Action(s): Throughly clean and pressure wash the garbage containment area to remove all debris and food build up. Ensure the organic bins are kept covered to discourage rodents. Steps must be taken to address the rodent harbourage (burrows) near the garbage collection area ( By September 30, 2017).

Comments

* Replace the worn out seal/gasket on the inside of the lid on the main ice maker ( ASAP).
* Clean the beverage spill in the concentrate storage area.
* Recommended recording the actual concentrations of dishwasher chlorine, Quats sanitizer concentration at the dispesner and bucket sanitizer at least once a day.
* Quats sanitizer at the dispenser tested >400 ppm. Adjust so that sanitizer concentration ranges from 200 -300 ppm.
* Ensure to replace the ice water mixture in stir spoon holding cups frequently.

Walk-in freezer below -18 C
Dairy creamer dispenser < 4 degrees C.
Hamburger patties storage freezer below -18 degrees C.
All other refrigeration units at 4 C or below.
