Observation (CORRECTED DURING INSPECTION): Sanitize used is not quats. Hydrogen peroxide for vegetables was being used by new staff.
Corrective Action(s): Train all staff so that they know which sanitizer is for food contact surfaces. Manager switched all solution in buckets to appropriate sanitizer (quats measured 200 ppm).

Observation (CORRECTED DURING INSPECTION): Missing paper towels in dispenser at the hand wash station in the cooking area.

Observation (CORRECTED DURING INSPECTION): Boxes of food were stored directly on the floor in the walk-in freezer.
Corrective Action(s): Ensure all food items in the cooler/freezer/dry storage are stored off the floor.

Hand wash stations provided with liquid soap and paper towels.
Walk-in cooler and prep line coolers were at or below 4 deg C.
Walk-in freezer and line freezer was at or below -18 deg C.
Hot holding for chicken, gravy, beef patties was at or above 60 deg C.
Temperature log was available and up to date.
Dishwasher final sanitizing rinse reached 71 deg C at plate surface (1st run).
No signs of pests noted at time of visit. Pest control monitoring in place.
Staff wearing clean uniforms and hair nets.
Staff washroom and public washrooms were in sanitary condition.
General sanitation was satisfactory at time of inspection.
