Observation (CORRECTED DURING INSPECTION): A few glasses were washed in the glasswasher. The glasswasher is not functioning properly.
Corrective Action(s): Wash these glasses again in the dishwasher. Until the glasswasher has been repaired, wash all glasses in the dishwasher instead. Date to be corrected by: Immediately

Observation (CORRECTED DURING INSPECTION): Frozen vacuum packaged foods were thawing in the cooler with the vacuum seal intact.
Corrective Action(s): Open the packaging to allow air in to prevent potential botulism. Botulism is caused by a bacteria that grows in environments without oxygen and potentially in refrigeration temperatures. Date to be corrected by: Immediately

Observation (CORRECTED DURING INSPECTION): Glasswasher is unable to dispense chlorine sanitizer at 50 ppm. Test strip showed 0 ppm at the plate level.
Corrective Action(s): Repair this glasswasher so that it is capable of dispensing chlorine sanitizer at 50 ppm. Date to be corrected by: August 28, 2018

- Low temperature dishwasher in use. Chlorine residual measured 50 ppm at the plate level during the final rinse.
- Three compartment sink available for manual dishwashing
- 200 ppm Quat sanitizer available in buckets with wiping cloths
- Meat slicer is well-maintained
- Dry storage is well-maintained
- Bulk food containers are well-maintained. Bulk food scoops are stored in sanitary manner.
- Ice machine is well-maintained. Ice scoop is stored in sanitary manner.
- Pop dispensers and holders are well-maintained

*Fruit fly activity observed at janitor station. Operator is aware of the issue and is working towards resolving it.
