Observation: Back of kitchen floor and hard to reach areas strating to accumulate food (baking debris). Area under under counter cooler dirty and is suffering too much food debris build-up.
Corrective Action(s): Give a good clean up of the kitchen baking area including hard to reach places. Thoroughly clean under counters in front area.

Comments

Removed some old equipment from facility and freed up some storage space. Good.
Prep cooler base less than 4 C, but the top is above 4 c. Minimal PHF's stored in this area.
**Note: Hot air seems to be moving pu the back of the prep cooler and is funnelled onto to front top cover, possibly affecting temperatures. Recommend cutting out a vent into the pony wall to redistribute warm air from motor.
