Follow-up inspection. Weather stripping has been installed underneath the door to dry storage room. Good. Kitchen floor underneath equipment and the walls above the wash sink have been cleaned. Good. Some build up of food debris still noticed in the corner behind the upright freezer Walls behind the prep cooler are also in need of cleaning. Following items require your attention: 1. Recommended installing washable panels such as stainless steel or FRP panels in the prep area and behind the preparation cooler to allow for easy cleaning. 2. Heavy dirt build up noticed on the compressor of the prep cooler. Clean the dirt build up and service the cooler so that it works efficiently ( By Dec. 20, 2019). 3. Ensure that walls above the stainless steel prep tables are kept clean.
