Follow-up inspection conducted:
-High temperature dishwasher achieved 74.8'C at the plate level after final rinse.
NOTE: Discussed with the owner after the previous routine inspection, with regards to the proper dishwashing method that facility should follow until the repair work is complete. Until now, all cooking tools/utensils have been washed/sanitized following the proper 3-compartment dishwashing method.

Cooked foods in the front warmer again at <60'C. Temperatures were ranging in between 52~54'C. According to the staff on site, all items were placed in the unit 15~40 minutes prior to the inspection. Further discussed with staff about the procedures followed during less busy hours. Staff had advised all items placed in the warmer for longer than 1 hour are discarded.

In order for the facility to monitor time instead of temperature, facility's Food Safety Plan must be revised accordingly. Food Safety Plan not kept on site at this time. Ensure to keep a copy on site.
