Observation (CORRECTED DURING INSPECTION): OUTSTANDING: dishwashing staff member mixes bleach with soap in first sink and does not sanitize dishware after washing.
Corrective Action(s): Provided 3 compartment sink warewashing diagram to staff to post at sink.
Dishware must be properly washed, rinsed, sanitized, then allowed to air dry. Discussed manual warewashing procedure with staff.

Push slicers in the prep room were maintained in a clean and sanitary manner - good
Butter chicken and chana masala measured 75.8 degrees C and 71.5 degrees C respectively - good. however, water in bain marie hot holding unit was not touching food containers. Reminded operator to ensure that the hot holding unit is filled with enough water to keep food inserts touching hot water on container sides.
3 compartment sink in prep room stocked with sink plugs.

note: tube light in prep room still burnt out. replace the burnt out bulb immediately.
