Observation (CORRECTED DURING INSPECTION): Cloth towel by the 2 compartment sink is used for wiping hands.
Corrective Action(s): Hands must be wiped/dried using single use paper towels. Using a cloth towel can potentially result in recontaminating or cross contaminating of hands. Towel was removed at the time of inspection.

209 - Food not protected from contamination [s. 12(a)]
Observation: 1) Corrugated plastic is used to cover food in the walk-in cooler.
2) Metal scooping can was stored inside the flour.
Corrective Action(s): 1) Discontinue the practice of using corrugated plastic - material cannot be properly cleaned and sanitized.
2) Discontinue the practice of storing scoops inside containers to prevent potential contamination of ingredients. Scoop was relocated at the time of inspection.

304 - Premises not free of pests [s. 26(a)]
Observation (CORRECTED DURING INSPECTION): A few rodent droppings were found in the front cash register area by the window. Facility is currently serviced monthly by a pest control operator.
Corrective Action(s): Contact your pest control operator regarding the rodent droppings. Clean and sanitize affected area using 1:10 bleach and monitor for new pest activity. Area was cleaned and sanitized at the time of inspection.

Comments

-Walk-in cooler was at 4C.
-Prep cooler was at 4C (top and bottom).
-Upright cooler was at 3C.
-Both chest freezers were less than -18C.
-2 compartment sink used for cleaning and sanitizing.
-Handwash station easily accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Bleach was much greater than 200ppm (test strip bleached out). To prepare 100ppm to 200ppm bleach sanitizer, add 5ml bleach oer liter of water. Bleach was diluted to 200ppm at the time of inspection.
-Chemical spray bottles were properly labelled.
-Washroom clean and sanitary.
-Deli slicer sanitation was satisfactory. A small area around the sharpening cover needs more attention.
-Foods generally stored off the floor and covered.
-General sanitation good at the time of inspection.
