Observation: Trays of tempura shrimp were being thawed at room temperature. This is an unacceptable method of thawing food.
Corrective Action(s): Product was still <4C. Operator was directed to transfer product to cooler to continue thawing process. In future, thaw product in cooler.

-Premises maintained in a sanitary condition.
-Ice machine appears clean/maintained.
-Handsinks supplied with hot + cold water, liquid soap and paper towel
-Temperatures of cooler were acceptable (4C or colder)
-Countertop sushi display coolers 1-3C
-Dios cooler/freezer 4C/-12C
-Sliding door coolers 3C/4C
-Chest freezers -21C to -25C
-pH of sushi rice 4.0. Operator reported new batch made hourly.
-High temperature dishwasher was functioning and met sanitizing temperature requirement. Final rinse at dish surface was 79C.
-Wiping cloths stored in sanitizer solution 100-200ppm
-No signs of pest activity noted at the time of inspection. Monitoring in place. Operator reported pest control contract in place with monthly service. No service reports present/available at the time of the inspection. In future, keep copy of pest control reports on-site.
*Seal behind two compartment place needs to be re-affixed. Ensure this is addressed within 1 week.
