Observation (CORRECTED DURING INSPECTION): Cook daal kept at room temperature with aluminum foil covering it completely. When inquired, chef indicated that it is extra in case they need to use it. Temperature of food measured at 56 C, still steaming.
Corrective Action(s): Required operator to cool the bucket of daal in ice bath and transfer them to a working cooler at 4 C or lower. Education provided to keep foods hot above 60 C or cold at 4 C or less. Operator moved the bucket into a cooler soon after during the inspection

Observation: Observed large number of flies in the back storage area, especially where dirty laundries are.
Corrective Action(s): Required to implement a system to control flies. Have a storage bin with tightly closed cover to put dirty laundry in. Clean and sanitize the area where the flies are mostly to remove any food source.
